- produces only rice varieties Carnaroli ?
Yes
Carnaroli only grow the plant because it is high, feels less competition of natural herbs (usually referred to as "weeds"), unlike other rice-size lower, that suffer the most. This allows us to let live the other plants because it does not totally undermine the development of the plant.
- fertilize your fields? And with what?
Occasionally.
The fertility of the land is obtained by alternating with legumes and wheat (all organically grown, of course) that return nutrients to the soil that the rice needs.
Then the paddy is grown only one year at a 2 or 3 years on the same ground.

- Make use of herbicides or insecticides against pests or weeds?
No.
We adhere to the EU project "Biodiversity in rice fields, which are not going to ever remove the water from rice fields to not kill the flora and fauna that grows naturally: mostly frogs, other amphibians and insects.
